Using lavash bread, one day I whipped up this random concoction and produced this thin, crispy, and totally customizable panini sandwich. Besides, who doesn't love MTO.
What is lavash bread you may ask? It is essentially an extremely thin flatbread from the Middle East. I came across it during a trip to my local Trader Joes and it is a total game changer and can be used for so much cooking recipes.
I love anything MTO (made to order), so that said these are totally customizable to your tastes in terms of toppings. Here are a few combos I make:
Mozzarella cheese, basil, tomatoes, and feta cheese
Cheddar cheese and broccoli
Cheddar cheese and jalapeno
Cheddar cheese and leftover deli meat such as chicken, turkey, or ham.
Literally, just a plain cheese is crazy good.

Lavash Bread
Cheese of Choice
Toppings of Choice
Butter (1 Tbsp)
Steps:
Using a griddle, I put the stove top flame on medium high heat, and then add 1 Tbsp of butter to melt.
Taking my sheet of lavash bread, I cut it in half, and then half again to make (2) squares to use.
I first place 1 of the squares down on the griddle.
Sprinkle cheese of choice on top of the lavash square currently on the griddle and let melt for a few seconds.
Add your toppings onto the square.
Sprinkle again, with more cheese, and then add the 2nd square we cut onto the top.
With a turner/spatula you can press down on the now enclosed lavash panini (pressing down assists melting the cheese and crisping up the bread.
When ready, flip and cook the other side.
Take off and ready to eat!
