A delicious lemon sauce with shrimp, and spaghetti. I have been told by many this is my best dish, but also the perfect date night meal.
I'm part Greek & Italian, so obviously I have to love lemon and seafood. Shrimp Scampi my way is insanely easy to make and has a very fresh taste to it.
Recipe:
Ingredients:
Spaghetti
Butter (Salted)
Olive Oil (Extra Virgin Recommended)
Garlic Minced
1 Small Onion Chopped
1 Lemon (we will use the juice and the peel)
Fresh or Frozen Parsley (2 Tbsp)
Salt & Pepper
Optional: Chopped Spinach & Red Pepper Flakes for Spice
To top: Parmesan Cheese
Shrimp (Highly recommend cleaned shrimp - it is a hassle having to de-tail shrimp)
Steps:
In a pot of boiling water, cook pasta as usual based off the box.
In another small pot, simultaneously boil and cook the shrimp.
In a saucepan, over medium low heat, drizzle some olive oil and add your chopped onion and garlic. Slowly start to add a few Tbsp of butter while this is cooking off.
When the butter has melted, slowly add half a cup of water, and add a strip of the peel of a lemon, along with the juice of half of a lemon.
Add your spices and herbs in
Add your cooked shrimp into the saucepan to get coated in the sauce.
Add in your spinach to wilt down.
Lastly, fish out your lemon peel and discard.
When ready to plate, add the cooked pasta to your dish. Add with a spoon the shrimp and sauce to the top. Lastly, top is parmesan cheese and enjoy!
